It must be made from at least 90% Ugni Blanc, Folle Blanche, or Colombard grapes.The Cognac region is recognised with its very own appellation controlee. This means that very Cognac is a brandy but every brandy is not a Cognac.
Cognac has some very ancient houses such as Martell, Hennessy and Courvoisier. Ernest Hemmingway famously said that there is no problem you cannot solve with a glass of Cognac. Many of the most expensive spirits in the world are Cognacs retailing at £1,200 a bottle.
