Rum
Rum is made wherever sugar cane thrives and as a result has been manufactured in many countries. It can be dated back to the 1400's and is arguably the mother ingredient of the cocktail and one of the most versatile spirits.
Sugar cane was first mentioned in our history books as grown in China before being transported to Europe and then to Arabia in the 3rd century AD.
Today Rum is produced throughout the world and comes in three main variants.
White or light Rum
Also known as silver rums they tend to be the entry point for most rum drinkers as they are generally sweeter and can serve quite well as a base for cocktails. Light rums are sometimes filtered after ageing to remove any colour. Most white rums are a mixture of rums aged up to two years old. Bacardi, the biggest rum brand in the world, has its history rooted in white rum.
Gold Rums
These are medium bodied rums and have a more discerning taste. They tend to be aged and their colour tends to be created from the migration of colour and flavour from wooden casks. Some brands add spices and caramel to the rum base to create a spiced rum.
Dark Rum
Also known as Black Rum and always a grade darker than golden rum, the dark colour is created by colour migration from charred wooden barrels. Molasses and caramel notes are typical of the dark rum flavour profile.
