Champagne is named after the Champagne region of France and is in effect a sparkling wine. Champagne, famously known for it's fizz, is created by the carbonation of the wine in the bottle by secondary fermentation. The description "champagne" is used by several manufacturers of sparkling wine across the world, but some countries limit the use of the description to only those sparkling wines that come from the Champagne appellation.
'Méthode Champenoise' is the traditional method by which Champagne is created and has a unique secondary fermentation process, initiated by adding several grams of yeast. According to the Appellation d'Origine Contrôlée a minimum of 1.5 years is required to completely develop all the flavour. When the harvest is exceptional a millesimé is declared. This means that the champagne will be exquisite and has to mature for at least 3 years. This declaration has made Champagne famous the world over.
