Bourbon is an American whiskey spelt with an extra e, whose provenance lies in Bourbon County, Kentucky. Bourbon must consist of at least 51% corn with the remainder being wheat and/or rye, and malted barley. It is distilled and then aged in new charred oak barrels for a minimum of two years. The two year maturation process is not a legal requirement for a whiskey to be called "bourbon", but it is a legal requirement for "straight bourbon."
After ageing, Bourbon is diluted with water and bottled. Bottling proof for whiskey must be at least 40% abv and most whiskey is sold at a higher proof. Higher proof Bourbon can be termed "barrel proof."
Bourbon can legally be made anywhere in the United States where it is legal to distill spirits. Legitimate production is not restricted to Kentucky, although Bourbon County is completely dry today. Illinois once produced nearly as much bourbon whiskey as Kentucky, and bourbon continues to be made in Virginia.
Legend says that Rev. Elijah Craig ran out of barrels so he decided to use barrels that had been used to store fish. To remove the smell he burnt the inside of the barrels and filled them with White Dog spirit. On their river journey from Bourbon County to New Orleans the white spirit had turned amber and the colours, vanilin and caramel had transferred to the spirit. Bourbon had been born.
